Gardens of Water

I've been scoring some great reads for cheap ($3.00!) at Big Lots!  I just finished reading Gardens of Water, a story about two families and two faiths in Turkey during and after a massive earthquake near Istanbul.  Although this story is fiction, the writer lived and taught in Turkey for three years (arriving just after the 1999 Marmara earthquake) and said much of the book was based upon his experiences while living there.

Working on the Garden!

Our backyard garden is really coming together. The past few years we've had peas, cucumbers, peppers, strawberries, eggplant, and tomatoes going wild in planters on the front porch and steps. We're hoping and praying that Tanner has grown up enough that he won't chew everything growing out back along the fence!!! The kids loved working with Daddy and Boppa Tom laying ties, pounding steaks, and turning the soil - and tomorrow the good dirt arrives! Thanks Dad!!!

Spring Break = Relaxation!

The kids have been out of school since last Thursday. No big plans or mystery trips this year - just lots of wonderful relaxing!!! We've been watching movies, playing baseball, going for bike rides, hanging outside in the beautiful weather, and cooking fun stuff! Yesterday we did go to Denver Museum of Nature and Science to see "Under The Sea" at IMAX, and then enjoyed all of the exhibits. Afterwards it was off to lunch at Chili's (kids ate FREE all day yesterday) and then to Dairy Queen!
...the annual "photo by the bear"...

...hubby and kids...
...took this looking west from the museum steps - beautiful view of the mountains over City Park and downtown Denver (including the gold-domed state capital)!

Classic Carrot Layer Cake

I'm not a huge fan of carrot cake, but Greg LOVES it!
I made this for his birthday, and it turned out really good!

CAKE
2 cups all-purpose flour
1 1/2 tsp baking powder
1 tsp baking soda
1/2 tsp salt
2 tsp cinnamon
1/2 tsp allspice
1/4 tsp ground cloves
1 1/2 cups sugar
3/4 cup canola oil
1/2 cup buttermilk
3 large eggs
3 cups shredded carrots

FROSTING
8 oz cream cheese, at room temperature
5 T unsalted butter, at room temperature
2/3 cup packed dark brown sugar
1 tsp vanilla extract
3 cups confectioners' sugar, sifted

Preheat oven to 350-degrees.  Butter and flour 2 8-inch round cake pans.  In a bowl, whisk together flour, baking powder, baking soda, salt, cinnamon, allspice, and cloves.  In another bowl, whisk sugar, oil, buttermilk, and eggs.  Pour oil mixture into flour mixture and stir just until evenly moistened.  Fold in carrots.

Scrape batter into cake pans; smooth tops.  Bake until cakes are golden brown and a toothpick inserted into center of a cake comes out clean, about 45 minutes.  Let cakes cool in pans on a wire rack for 10 minutes, then invert cakes onto rack to cool completely.

In a bowl, with an electric mixer on high speed, beat cream cheese and butter until smooth.  Add brown sugar and vanilla and beat until sugar is completely dissolved.  Add confectioners' sugar and beat on low speed until smooth and spreadable.

Place one cake layer on a serving plate, spoon about 1 cup frosting into center, and spread with a knife or offset spatula.  Place second layer on top and spread remaining frosting over top and sides.

Tip: You can make the frosting up to three days in advance.  Cover and keep it refrigerated.  Let sit at room temperature to soften before spreading.

Tonight we were able to see, and catch, the Supermoon - "a new or full moon that appears brighter, fuller and closer than usual"! We had fun getting these pictures!

John Chapter Nine and Writing!

Joshua's and Hannah's classes led chapel this morning.  They presented the story of Jesus healing the blind man - the 6th graders narrated and the 3rd graders acted out the story.  Afterwards they sang and signed one of my favorite songs "Shout to the Lord" by Darlene Zschech. It was a great day to be "filled".
...the serious one...
...and the silly one...
After chapel they presented the writing awards!  Most of you know that Hannah LOVES to write and today was an exciting affirmation of that!  She won 1st place for poetry among 3rd/4th grade, and 2nd place for non-fiction among 3rd/4th grade!
SO PROUD ~ look at that smile!!!

Rocket Inn Pizza!

Brian and Margie came to town last night, and brought Rocket Inn pizza with them from Indianola, Nebraska - yum! We found out about this place from my coworker who goes there a few times a year and brings back a dozen pizzas to freeze! Small world that this is the next town over from where Brian and Margie now live! It has a really unique flavor - almost smokey - I love it! It was great to have all of us together just hanging out at Dad and Mom's :-)

Today after church we met Mom and Margie for lunch at Olive Garden...
another one of our favorites!

Spring...

...is definitely right around the corner ~ dad and I walked this morning and then I ran errands in capris and (Rockies!) flip flops!!!! It's absolutely beautiful outside!  The kids have been chomping at the bit to get a garden put in, so today they pruned bushes and dragged it all to the side of the house!  Nothing like cheap labor!

Fat Tuesday = New Orleans Jambalaya

This was the first recipe we made when we moved into our house ~ April 5, 1994 ~ and it has stood the test of time!!! We love to make it for Fat Tuesday / Mardi Gras! Gary joined us tonight for jambalaya, pickled okra, and rolls!

2 T flour
1 medium onion, chopped
1 clove garlic, crushed
1 red pepper, chopped (we've used orange, too)
14 oz can tomatoes
4 c chicken stock
1/4 tsp ginger
pinch allspice
1/2 tsp thyme
1/4 tsp cayenne pepper
pinch salt
dash tabasco
4 oz uncooked rice (we use 6 oz brown)
2# uncooked shrimp
2 green onions, chopped to garnish
• Melt butter and add flour; cook on low. Add onion, garlic and pepper and cook until soft.
• Add tomatoes and juice; add stock and mix well.  Add ginger, allspice, thyme, cayenne pepper, salt, and tabasco. Boil rapidly while stirring for two minutes.
• Add rice; stir and cover. Cook 15-20 minutes until rice is tender.

Two at a Time?!?!

Somehow I've managed to get caught up in two books at once - both WWII books but very different stories!  The Few spotlights a handful of American pilots who joined the Royal Air Force and its fighter squadrons during the Battle of Britain.  Nazi Gold is a look into the secret vaults and numbered accounts of the Third Reich that were held in Swiss banks, along with the Swiss' reluctance to return hundreds of millions of dollars stolen from Holocaust victims after the war.  Both of them ~ incredibly difficult to put down!!!

Operation Frog!

Joshua's 6th grade science classes are all about dissection right now ~ they've done a worm, a fish, a crayfish, and today ~ a frog!  I was able to be in the lab and it was very cool!  All of the kids did amazing jobs!!!
