White Chili

The cooler weather always makes me want to throw something in the crock pot, and chili always makes the cut.  Here's a new recipe we found in Taste of Home and it was delicious!  Thanks to The Foster Four for rounding out the meal with chopped salad and corn bread :-)

White Chili

1 T olive oil
3 medium onions, chopped
2 garlic cloves, minced
4 cups grilled chicken, cubed
2 cups chicken broth
2 cans (15 oz each) cannellini beans, rinsed and drained
1 can (15 oz) garbanzo beans, rinsed and drained
1 can (4 oz) chopped green chilies
2 tsp ground cumin
1/2 tsp dried oregano
1/4 tsp cayenne pepper
1/4 tsp salt
1/4 cup mined fresh cilantro
Optional toppings: corn chips, shredded Monterey Jack cheese, sour cream, cilantro

1. In a large skillet, heat oil over medium-high heat.  Add onions; cook and stir until tender.  Add garlic; cook 1 minute longer.
2.  Transfer to a 3-quart slow cooker.  Stir in chicken, broth, beans, chilies, and dry seasonings.
3.  Cook, covered, on low 6-8 hours.  Stir in cilantro.  If desired, serve with corn chips, cheese, sour cream, and cilantro.

Our computer crashed and I lost SO many pictures :-(  One thing I am incredibly grateful for - all of the pictures on our blog were salvageable!  I am slowly downloading and saving them outside of our new computer...

Alex Kershaw

Dad enjoyed reading The Battle of The Bulge every December, and another author that he really liked was Alex Kershaw, who does an amazing job of researching and then weaving the facts together into really awesome reads.  Shortly after Dad passed away, I read the book he had checked out from the library, The Longest Winter, and I have been hooked on this author ever since. Joshua has also read two of his books since the start of the school year! 

  

Minnesota Day One

Mom, Gary, Greg, Joshua, Hannah, and I flew out to Minnesota together.  The first night cousin Tam treated us to dinner and a show a Chanhassen Dinner Theatre - we saw "Joseph and The Amazing Technicolor Dreamcoat" and it was absolutely amazing!

After 9 years at BLS, Joshua is ready to take on the halls of Bear Creek High School - he's pretty psyched for the Engineering Track :-) We are excited to see what God has in the works for him!
